Meredith and Caroline made Coconut Quick Bread [Food52][@rev]. The only note was that Meredith ran out of regular coconut so a bit less than half of it is sweetened. It was certainly not too sweet though! I thought it was just a tad dry but Meredith was happy with it.
Next time: Use coconut milk! Add to the coconut flavor!
